Coonawarra – Cabernet Sauvignon
The grapes for this wine were picked using a Pellenc Selective Harvester which de-stems in the vineyard and leaves much of the organic matter in the vineyard. Fermentation took place in 10T open fermenters and malolactic fermentation took place in both French oak barrels and stainless steel. Approximately 65% of the blend when into third fill French oak for 6 – 15 months before bottling.

More fruit than many a neighbour, with gushing blackcurrant, plum and blueberry corralled by seams of nicely managed sage and tapenade-doused tannins. The acidity, bright. The oak well handled. Otherwise, eminently drinkable and good across the mid-term.
