Open-fermented oxidatively like a red wine but without the skins; 25% mlf; matured 10 months on lees in one old French oak hogshead. Inspired by Sancerre and made by the same recipe, to sophisticated and stunning effect! The greatest sauvignons are more about mineral tension, structure and drive than overt fruit. Here, the chalk mineral structure of the Limestone Coast is brilliantly paired with malic acidity for an incredible finish of undeterred line and length. Impeccably engineered for the long haul.

A more complex, fumé style of lime peel and plenty of spice, as well as some white pepper. Really distinctive. The palate has complex texture and nicely crafted tannin grip. Savory stony tones and citrus and tropical fruit are nicely mixed here. Drink now. Screw cap.

This is a white wine made in similar ways to red wines without the skins addition. It was open fermented in a very oxidative way with partial malolactic fermentation and pumping over in oak before maturation in one year old French hogshead. It results in a tremendous wine showing the obvious influence of oak but in a way that sits harmoniously with the bright fruit. Cream and rich and just a terrific drink. Cellar to 7 years.
